The Cook Off
We have heard your bragging. You claim your ribs, butt, and shoulders are the best. You make idle threats to the tv screen as you watch Pitmasters claiming, “My pork chops would destroy yours.” You were arrested in 2007 when you got in a fight over your dry rub. Your wife doesn’t even know the secret ingredient to your BBQ sauce.
Do you have what it takes to be the best Louisiana has to offer in the magical realm of Pork, come test your chops! Bad pun intended…It doesn’t matter what your kitchen pedigree is. Think your ribs are better than any restaurants? Can your pulled pork take the crown? Come compete for Lousiana’s bragging rights! This is a Louisiana State Sealed proclaimed event, signed by Governor Bobby Jindal.

Note: You do not have to cook a whole pig to compete, anything with pork as the main ingredient is acceptable.

The Roast
Come join us while we roast pigs on a spit and smoke oysters. Plenty of drinks intended for adults and other food as
well.
Hogs for the Cause began as an idea to recreate the pig roasts so often encountered around the South. Depending on the amount of money raised and number of attendees, we can determine how many Pigs we plan to roast.
At the very least, we will have one hog on a spit and one in the smoker. Yes, this will be an all day event! It may not take long for the piggie to get to the market, but cooking to perfection takes time!
Not a fan of Pork? Don’t show! Just kidding. We will have a variety of other foods smoking as well as many enjoyable beverages. Pork and Beans is good but Pork and beer is better!

Where and When
The roast will take place at the Butterfly behind audubon zoo on Saturday, March 6th, 2010 from sun up to sun down. There’s no admission, but we hope you will buy a t-shirt or donate for the cause.
2010 Hogs for the Cause Cook Off Rules

All decisions of the Hogs for the Cause Competition Committee are
final.

Each team shall consist of a chief cook and as many assistants as
the chief cook deems necessary. Each team shall register with the
Director of the Competition Committee by 9 a.m. the morning of
the event.

Each team will be assigned a cooking space. Pits, cookers, props,
trailers, motor homes, vehicles, tents or any other equipment
(including generators) shall not exceed the boundaries of the
team's assigned cooking space. All seasoning and cooking of
product shall be done within the assigned cooking space. Teams
shall not share an assigned cooking space or cooking device.

Contestants shall provide all needed equipment, supplies and
electricity, except as arranged for in advance. Contestants must
adhere to all electrical, fire and other codes. A fire
extinguisher shall be near all cooking devices.

Entries will be submitted in provided numbered container,
provided by the contest organizer. The number must be on top of
the container at turn-in. The container shall not be marked in
anyway so as to make the container unique or identifiable.
Aluminum foil, toothpicks, skewers, foreign material, and/or
stuffing is prohibited in the container. Marked entries will be
disqualified.

Each contestant must submit four (4) portions of their finished
dish to the judges for judging. The finished dish must include
pork as the main ingredient.

Turn-in times will be announced when the team registers with the
Director. An entry will be judged only at the time established by
the contest organizer. The allowable turn-in time will be five
(5) minutes before to five (5) minutes after the posted time with
no tolerance.

It is the responsibility of the contestant to see that the team's
assigned cooking space is clean and orderly following the
contest. All fires must be put out and all equipment removed from
site. It is imperative that clean-up be thorough. Any team's
assigned cooking space left in disarray or with loose trash,
other than at trash containers, may disqualify the team.

Teams are also required to have ample portions of their dish
available for the public to taste.

- Up to twenty (20) points for taste.
- Up to ten (10) points for degree of difficulty/creativity.
- Up to five (5) points for use of pork.
- Up to five (5) points for presentation.
- Fundraising

At each team site will be placed a 5 Gallon Kentwood Jug,
provided by the organizers. Each team will solicit donations
before and during the competition.

The team with the highest dollar amount of donations will
receive 20 points, second place will receive 10 points, third
place will receive 5 points.

The team with the highest combined score from the Cooking and
Fundraising Portions of the Judging Portion shall be named the
Louisiana Pork Cook Off Grand Champion.
